Green with Envy Desserts
According to legend, leprechauns are not very friendly, but your family will find it hard to believe when they taste Leprechaun Pie. They'll think a lucky leprechaun came down and cast a magical spell and turned this tart lemon pie green. Pistachio Fluff is another great dessert kids will love. Filled with pineapple, whipped cream and nuts, your family will think they've found that lucky pot of gold at the end of the rainbow.

Another simple dessert to serve at the end of your St. Patrick's Day feast is store bought pistachio ice cream. To accompany the ice cream, make a batch of sugar cookies. Kids will love to help you cut out cookies in the shape of shamrocks. Before baking, sprinkle them with sugar you've colored green. Or after they are baked, frost the tops with green icing. Pistachio pudding is another option that will keep the green theme going. Make Jell-O Jigglers from lime-flavored gelatin and cut them out using shamrock-shaped cookie cutters for a plate full of wiggly shamrocks.

Now gather up the family and enjoy your Irish feast. And if you feel the need, go ahead and squirt some green food coloring in your beer, but don't forget the kids! Green milk, anyone?
